Warm up this fall with a delicious roasted butternut squash soup topped with crispy turkey bacon.

  • 2 cups roasted butternut squash
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup coconut milk

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add chopped onion and garlic, sauté until translucent.
  3. Add roasted butternut squash, vegetable broth, cinnamon, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Blend the soup until smooth. Stir in coconut milk and adjust seasoning.
  6. Serve hot, topped with crispy turkey bacon.
