Ingredients

  • 2 pounds ripe tomatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh basil leaves
  • 1/2 cup heavy cream (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut tomatoes in half, and place them cut-side up on a baking sheet. Drizzle with olive oil and roast for 30-40 minutes.
  3. In a pot, sauté onions and garlic until soft.
  4. Add roasted tomatoes, vegetable broth, sugar, salt, and pepper. Simmer for 20 minutes.
  5. Blend the soup until smooth, then stir in the basil and heavy cream if using. Serve warm.

Notes

  • For a spicier kick, add a pinch of red pepper flakes.
  • Fresh basil can be substituted with dried basil, but adjust the amount.
