  • 4 cups vegetable broth

  • 1/2 teaspoon black pepper
  • 1 teaspoon sage
  • 1/2 teaspoon nutmeg
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Peel and dice the butternut squash into small cubes.
  2. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until soft.
  3. Add the butternut squash to the pot and cook for about 5 minutes, stirring occasionally.
