Shepherd’s Pie Soup

A warm and hearty Shepherd’s Pie Soup that combines traditional flavors with turkey bacon for a comforting meal.

  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound ground beef or lamb
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups mashed potatoes (for topping)

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and crumble. Leave some grease in the pot.
  2. Add onion, carrots, celery, and garlic; sauté until softened.
  3. Add ground beef or lamb and cook until browned.
  4. Stir in chicken broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  5. Simmer for 20 minutes.
  6. Stir in frozen peas and crumbled bacon.
  7. Serve hot topped with mashed potatoes.

Notes

  • For a richer flavor, use beef broth instead of chicken broth.
  • Feel free to add other vegetables like corn or green beans.
