- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 pound ground beef or lamb
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups mashed potatoes (for topping)
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and crumble. Leave some grease in the pot.
- Add onion, carrots, celery, and garlic; sauté until softened.
- Add ground beef or lamb and cook until browned.
- Stir in chicken broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Simmer for 20 minutes.
- Stir in frozen peas and crumbled bacon.
- Serve hot topped with mashed potatoes.
