  • 2/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and powdered sugar.
  3. Add vanilla extract and mix until combined.
  4. Gradually add the flour and salt, mixing until a dough forms.
  5. Roll out the dough on a floured surface to about 1/4 inch thick.
  6. Cut out shapes using cookie cutters and place them on a baking sheet.
  7. Cut out the centers of half of the cookies for the ‘linzer’ effect.
  8. Bake for 12-15 minutes or until lightly golden.
  9. Let cookies cool completely before filling with raspberry jam.
  10. Top each filled cookie with another cookie, pressing gently.
