  • 1/2 cup raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the vanilla and almond extracts, mixing well.
  4. Gradually add the flour and salt, mixing until a soft dough forms.
  5. Chill the dough for 30 minutes.
  6. Roll out the dough to about 1/4 inch thick and cut into desired shapes.
  7. Cut out the center of half the cookies to create a window for the jam.
  8. Place the cookies on a baking sheet and bake for 10-12 minutes or until lightly golden.
  9. Let cool and spread raspberry jam on the whole cookies, then top with the cut-out cookies.
