Shrimp and Asparagus Farfalle

  • 8 ounces farfalle pasta
  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the farfalle pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sautéing for 1 minute.
  3. Add shrimp to the skillet and cook until pink, about 2-3 minutes. Remove shrimp and set aside.
  4. Add asparagus to the skillet and cook for 2-3 minutes until tender-crisp.
  5. Return shrimp to the skillet and add cooked pasta. Toss with lemon juice, salt, and black pepper.
  6. Sprinkle with Parmesan cheese and serve warm.

  • For extra flavor, add fresh herbs like basil or parsley.
  • This dish can be made with other types of pasta if desired.
