Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken thighs and sear each side until golden brown, about 5 minutes per side.
  2. Remove chicken from the skillet and set aside. In the same skillet, add diced onion and minced garlic, sauté until softened.
  3. Add rice, chicken broth, heavy cream, paprika, salt, and pepper to the skillet. Stir to combine.
  4. Return chicken to the skillet, nestling it into the rice mixture.
  5. Cover and reduce heat to low. Cook for about 20-25 minutes, or until rice is tender and chicken is cooked through.
  6. Remove from heat and let sit for 5 minutes before serving.
