Slow Cooker Chicken Burrito Bowl

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 tablespoon taco seasoning
  • 1 cup rice, uncooked
  • 2 cups chicken broth
  • 1 cup shredded cheese

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add black beans, diced tomatoes, corn, and taco seasoning on top of the chicken.
  3. Pour uncooked rice over the mixture.
  4. Pour chicken broth over everything.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken and mix everything together.
  7. Top with shredded cheese before serving.
