Slow Cooker Chicken Cacciatore

Ingredients

  • 4 chicken thighs
  • 2 cups bell peppers, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • salt to taste
  • pepper to taste

Instructions

  1. Heat olive oil in a pan and brown the chicken thighs.
  2. Place the chicken in the slow cooker with bell peppers, onion, garlic, diced tomatoes, oregano, basil, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
  4. Serve over pasta or with crusty bread.

Notes

  • For extra flavor, marinate chicken overnight.
  • Feel free to add mushrooms or olives.
