Ingredients

  • 2 pounds chicken thighs
  • 4 cups chicken broth
  • 3 cups chopped vegetables (carrots, potatoes, celery)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. Add the chicken broth, chopped vegetables, onion, garlic, thyme, rosemary, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 4-5 hours until the chicken is cooked through.
  5. Shred the chicken with two forks and stir back into the stew before serving.
