- 2 pounds chicken thighs, boneless and skinless
- 1 tablespoon olive oil
- 1 onion, diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- salt and pepper to taste
- 3 tablespoons cornstarch
- 1/4 cup water
- Heat the olive oil in a pan over medium heat. Add the onion, carrots, and celery, and sauté for 5 minutes.
- Add the chicken, garlic, broth, thyme, rosemary, bay leaves, salt, and pepper to the slow cooker.
- Stir in the sautéed vegetables.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
- In a small bowl, mix the cornstarch with water and stir into the stew to thicken.
- Let it cook for another 30 minutes.
