Slow Cooker Chicken Stew

A comforting stew that’s perfect for cozy nights, made easily in a slow cooker.

Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • salt and pepper to taste
  • 3 tablespoons cornstarch
  • 1/4 cup water

Instructions

  1. Heat the olive oil in a pan over medium heat. Add the onion, carrots, and celery, and sauté for 5 minutes.
  2. Add the chicken, garlic, broth, thyme, rosemary, bay leaves, salt, and pepper to the slow cooker.
  3. Stir in the sautéed vegetables.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  5. In a small bowl, mix the cornstarch with water and stir into the stew to thicken.
  6. Let it cook for another 30 minutes.

Notes

  • This stew can be made a day in advance for enhanced flavors.
  • Feel free to add other vegetables like potatoes or peas.
