  • 4 cups chicken broth
  • 3 cups diced potatoes
  • 2 cups carrots, sliced
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a skillet over medium heat and sauté the onions and garlic until translucent.
  2. Transfer the sautéed onions and garlic to the slow cooker.
  3. Add the chicken thighs, potatoes, carrots, chicken broth, thyme, salt, and pepper to the slow cooker.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or on high for 4 hours, until the chicken is fully cooked and tender.
  6. Shred the chicken in the slow cooker before serving.
