Slow Cooker Classic Pot Roast

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 1 large onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme

Instructions

  1. Season the beef with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  3. Transfer the roast to the slow cooker.
  4. Add the broth, onion, carrots, celery, garlic, Worcestershire sauce, and thyme to the slow cooker.
  5. Cover and cook on low for 8 hours or until the meat is tender.
  6. Remove the roast and vegetables, let rest for a few minutes before slicing.
