Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine pumpkin puree, brown sugar, granulated sugar, and softened butter.
  3. Add the egg and mix until well combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
