Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a large bowl, cream together the butter and sugars until light and fluffy.
  3. Add the eggs, sour cream, and vanilla, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. In a small bowl, mix the brown sugar and cinnamon for the topping.
  7. Fill each muffin cup halfway with batter, then sprinkle a layer of the cinnamon sugar mixture, followed by more batter.
  8. Top with remaining cinnamon sugar mixture.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
