Spanish Potato and Chorizo Soup

Ingredients

  • 1 pound chorizo, sliced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, diced
  • 6 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups kale, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chorizo and cook until browned.
  2. Add diced onion and garlic, sauté until translucent.
  3. Add potatoes, chicken broth, paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes, until potatoes are tender.
  5. Stir in chopped kale and cook for an additional 5 minutes.
  6. Remove from heat and serve warm.
