Spicy Maple Chicken and Coconut Rice

A delicious combination of spicy maple chicken served over creamy coconut rice.

  • 4 chicken thighs boneless, skinless
  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 can (14 oz) coconut milk
  • 1 cup jasmine rice
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix maple syrup, soy sauce, and sriracha sauce.
  3. Coat the chicken thighs in the mixture and place them in a baking dish.
  4. Bake for 25-30 minutes until cooked through.
  5. Meanwhile, in a saucepan, combine coconut milk, rice, and salt.
  6. Bring to a boil, then reduce heat and cover, cooking for 15-20 minutes.
  7. Once the chicken is done, serve it over the coconut rice.

Notes

  • For extra spice, add more sriracha.
  • Let the chicken marinate for a few hours for enhanced flavor.
