Sweet Potato and Chickpea Curry

A delicious, hearty curry featuring sweet potatoes and chickpeas, perfect for a vegan meal.

  • 2 medium sweet potatoes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 2 cups vegetable broth
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt to taste
  • 1 tablespoon oil for cooking
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat oil over medium heat. Add onion and garlic, cooking until soft.
  2. Add sweet potatoes, chickpeas, curry powder, cumin, and turmeric. Stir to coat everything in spices.
  3. Pour in coconut milk and vegetable broth. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
  4. Season with salt to taste. Serve hot, garnished with fresh cilantro.
