  • 1 can black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup corn, fresh or frozen
  • 1 avocado, sliced
  • 2 tablespoons olive oil

  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, chili powder, and salt. Spread them on a baking sheet and roast for 25-30 minutes, or until tender.
