Sweet Potato Breakfast Bowl

Ingredients

  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1 avocado, sliced
  • 1/4 cup Greek yogurt
  • 2 tablespoons honey
  • 1/4 cup chopped nuts

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes, then toss with olive oil, salt, pepper, and cinnamon.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
