  • 4 cups peeled and diced potatoes
  • 1 cup diced turkey bacon
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large crockpot, combine the potatoes, turkey bacon, onion, garlic, and chicken broth.
  2. Cover and cook on low for 6-8 hours or until the potatoes are tender.
  3. Once done, use a potato masher to mash some of the potatoes for a creamy texture.
