Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together pumpkin puree, sugar, and vegetable oil until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, combine flour, baking powder, baking soda, spices, and salt.
  5. Gradually stir the dry ingredients into the pumpkin mixture until just combined.
  6. Fill each cupcake liner about 2/3 full with the batter.
