  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mascarpone cheese
  • 1/4 cup brewed espresso or strong coffee
  • 1 tablespoon coffee liqueur (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix flour, cocoa powder, salt, and set aside.
  3. In another bowl, whisk together sugar and melted butter, then add eggs and vanilla.
  4. Combine wet and dry ingredients, mixing until just combined.
  5. Spread the batter in the prepared pan and bake for about 20-25 minutes.
  6. While the brownies are cooling, whisk together mascarpone, espresso, and coffee liqueur.
  7. Spread the mascarpone mixture over the cooled brownies.
  8. Chill in the refrigerator for at least 2 hours before serving.
