  • 1/2 cup cocoa powder
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup espresso, cooled
  • 1/4 cup mascarpone cheese
  • 1/4 cup heavy cream
  • 1 tablespoon coffee liqueur (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, melt the butter and mix with sugar until well combined.
  3. Add the eggs and vanilla, beating until smooth.
  4. Mix in the flour and cocoa powder until just combined.
  5. Pour the batter into a greased baking pan.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. While the brownies cool, whip the cream and mascarpone together until light and fluffy.
  8. Spread the mascarpone mixture over the cooled brownies.
  9. Drizzle with cooled espresso and coffee liqueur if using.
  10. Cut into squares and serve.

Notes

  • For a stronger coffee flavor, use dark chocolate instead of cocoa powder.
  • These brownies taste even better the next day after chilling in the fridge.
