- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 ounce) packages cream cheese
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup sour cream
- 8 ounces semisweet chocolate, melted
- 8 ounces milk chocolate, melted
- 1 cup dark chocolate ganache
- Preheat oven to 325°F (163°C).
- In a bowl, combine cookie crumbs and melted butter. Press mixture into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
- Add eggs one at a time, blending each fully before adding the next. Stir in sour cream.
- Fold in melted semisweet and milk chocolates.
- Pour the batter over the crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set.
- Allow cooling, then chill in the refrigerator for several hours or overnight.
- Top with dark chocolate ganache before serving.
