  • 1 1/2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 cup sour cream
  • 8 ounces semisweet chocolate, melted
  • 8 ounces milk chocolate, melted
  • 1 cup dark chocolate ganache

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, combine cookie crumbs and melted butter. Press mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
  4. Add eggs one at a time, blending each fully before adding the next. Stir in sour cream.
  5. Fold in melted semisweet and milk chocolates.
  6. Pour the batter over the crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set.
  8. Allow cooling, then chill in the refrigerator for several hours or overnight.
  9. Top with dark chocolate ganache before serving.

Notes

  • For a firmer cheesecake, increase the chilling time.
  • Serve with whipped cream for added indulgence.
