- 2 cups coconut water
- 1 cup fresh pineapple chunks
- 1/2 cup lime juice
- 1/4 cup sugar (or to taste)
- 3 cups cold water
- ice cubes
- fresh mint leaves for garnish
- In a blender, combine the coconut water, pineapple chunks, lime juice, and sugar.
- Blend until smooth.
- Add the cold water and blend again until well mixed.
- Strain the mixture into a pitcher through a fine mesh sieve.
- Serve over ice cubes and garnish with fresh mint leaves.
Notes
- Adjust sweetness by adding more or less sugar.
- Can be made a day ahead and kept in the refrigerator.
