Deliciously soft and chewy oatmeal raisin cookies that are also healthy!

Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the rolled oats and whole wheat flour.
  3. Add brown sugar, coconut oil, honey, and vanilla extract to the dry mixture and stir until combined.
  4. Add baking soda and cinnamon, then fold in the raisins.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes until lightly golden.
  7. Let cool before enjoying your soft and chewy cookies!
