- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup plant-based milk
- 1/3 cup vegetable oil
- 1 tablespoon apple cider vinegar
- 1 cup coconut cream
- 1 cup cherries, pitted and halved
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C) and grease a square baking dish.
- In a bowl, mix together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the milk, oil, and vinegar.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Transfer the batter to the baking dish and bake for 30-35 minutes.
- Let it cool before cutting into cubes.
- In a serving dish, layer chocolate cake cubes, whipped coconut cream, and cherries.
- Repeat the layers until the dish is filled.
- Chill in the refrigerator for at least an hour before serving.
