Vegan Garlic Chickpea Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 cans chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup spinach, chopped
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Add the chickpeas, vegetable broth, cumin, smoked paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  6. Stir in the chopped spinach and lemon juice just before serving.
