A comforting and hearty vegetable soup recipe featuring turkey bacon and chicken ham, perfect for chilly days.

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, add olive oil and sauté onion, carrots, and celery until softened.
  3. Add garlic, cook for another minute.
  4. Pour in vegetable broth and diced tomatoes, then stir in the crumbled turkey bacon, basil, and oregano.
  5. Simmer for 20-30 minutes.
  6. Season with salt and pepper before serving.

Notes

  • Feel free to add any other vegetables you like.
  • For a vegetarian version, omit turkey bacon and use vegetable broth.
