- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- In the same pot, add olive oil and sauté onion, carrots, and celery until softened.
- Add garlic, cook for another minute.
- Pour in vegetable broth and diced tomatoes, then stir in the crumbled turkey bacon, basil, and oregano.
- Simmer for 20-30 minutes.
- Season with salt and pepper before serving.
Notes

- For a vegetarian version, omit turkey bacon and use vegetable broth.
