  • 2 large zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchinis into fries.
  3. In a bowl, mix breadcrumbs, parmesan cheese, garlic powder, salt, and pepper.
  4. In another bowl, whisk the eggs.
  5. Dip each zucchini fry into the egg, then into the breadcrumb mixture.
  6. Place the coated fries on a baking sheet.
  7. Bake for 20-25 minutes or until golden and crispy.

Notes

  • Serve with a dipping sauce of your choice.
