  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon ground turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups kale, chopped
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger; sauté until softened.
  3. Stir in turmeric, cumin, and paprika; cook for another minute.
  4. Pour in chicken broth, and bring to a simmer.
  5. Add shredded chicken, kale, carrots, and celery; cook until vegetables are tender.
  6. Season with salt and pepper before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For extra flavor, add a squeeze of lemon before serving.
