  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, diced
  • 1 onion, diced

  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and bell pepper, cooking until soft.
  3. Stir in garlic and Cajun seasoning, cooking for another minute.
  4. Add the rice, stirring to coat with the oil and spices.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes.
  7. Add shrimp and tomatoes, cooking until shrimp are pink and cooked through.
  8. Season with salt and pepper, then serve hot.
