  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 large apples, peeled and diced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/4 cup caramel sauce
  • 1/2 cup whipped cream

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of muffin tins lined with paper liners.
  3. In another bowl, mix diced apples with brown sugar and cinnamon. Spoon the mixture over the crusts.
  4. In a separate bowl, beat together cream cheese, sugar, and vanilla until smooth. Add the egg and mix until combined. Spoon the cream cheese mixture over the apples.
  5. Bake for 20 minutes or until the cheesecakes are set. Allow to cool.
  6. Top with caramel sauce and whipped cream before serving.
