Cowboy Stew

This Cowboy Stew is a hearty dish featuring turkey bacon, beans, and vegetables, perfect for a comforting meal.

Ingredients

  • 4 strips turkey bacon
  • 1 pound ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot until crispy. Remove and crumble it.
  2. In the same pot, add ground beef and cook until browned.
  3. Add onion and garlic, cooking until softened.
  4. Stir in beans, corn, diced tomatoes, beef broth, chili powder, cumin, and the crumbled bacon.
  5. Bring to a simmer and cook for 30 minutes.
