Creamy Butternut Squash Gnocchi with Sausage, Thyme, and Sage

Ingredients

  • 1 pound butternut squash, peeled and cubed
  • 1 package gnocchi
  • 1 pound Italian sausage, casing removed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh sage, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the butternut squash in boiling water until tender.
  2. In a skillet, heat olive oil and cook the sausage until browned.
  3. Add garlic, thyme, and sage; cook for an additional minute.
  4. Stir in the cooked butternut squash and heavy cream, simmer for 5 minutes.
  5. Add gnocchi and cook until they float to the surface.
  6. Season with salt and pepper to taste before serving.
