Creamy Spinach and Mushroom Lasagna

A rich and creamy lasagna filled with fresh spinach and mushrooms.

  • 12 lasagna noodles lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 10 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 1 cup grated Parmesan cheese
  • 3 cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions.
  3. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  4. Add mushrooms and cook until browned. Stir in spinach until wilted and remove from heat.
  5. In a bowl, combine ricotta cheese, Parmesan cheese, oregano, salt, and pepper.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer noodles, ricotta mixture, spinach and mushroom mixture, and mozzarella cheese. Repeat layers until ingredients are used up.
  8. End with a layer of marinara sauce and mozzarella cheese on top.
  9. Bake for 30-35 minutes until bubbly and golden.
  10. Let it cool for a few minutes before slicing.

Notes

  • For a vegetarian option, ensure the marinara sauce is meat-free.
  • Feel free to add other vegetables like zucchini or bell peppers.
