- 1 pound shrimp, peeled and deveined
- 4 cups corn kernels (fresh or frozen)
- 4 slices turkey bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can coconut milk
- 2 teaspoons Cajun seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon over medium heat until crispy.
- Add the onions and garlic, sauté until fragrant.

- Add the vegetable broth and bring to a boil.
