Creole Corn and Shrimp Soup

A delicious and comforting soup combining shrimp, corn, and turkey bacon, offering a taste of the South.

  • 1 pound shrimp, peeled and deveined
  • 4 cups corn kernels (fresh or frozen)
  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the onions and garlic, sauté until fragrant.
  3. Stir in the corn and cook for another 5 minutes.
  4. Add the vegetable broth and bring to a boil.
  5. Reduce heat, add coconut milk, shrimp, and seasonings. Simmer until shrimp are cooked through.
  6. Taste and adjust seasoning if necessary. Serve hot.
