- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup espresso or strong coffee
- 1 cup chocolate chips
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In another bowl, mix the eggs, milk, vegetable oil, vanilla extract, and espresso until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
