Easy Ground Beef Enchiladas

A delicious and easy recipe for ground beef enchiladas that will bring some excitement to your taco night!

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 can enchilada sauce
  • 1/2 cup chopped onion

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef and drain excess fat.
  3. Add the taco seasoning and onion, and cook until the onion is translucent.
  4. Spread a thin layer of enchilada sauce at the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and cheese, roll them up, and place them seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with additional cheese.
  7. Bake for 20-25 minutes until heated through and cheese is bubbly.

Notes

  • For a spicier variant, add diced jalapeños to the beef mixture.
  • Top with sour cream and guacamole for serving.
