Garlic Herb Roasted Potatoes, Carrots, and Green Beans

  • 1 pound carrots
  • 1 pound green beans
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the potatoes into halves or quarters.
  3. Peel and slice the carrots.
  4. Trim the ends of the green beans.
  5. In a large bowl, combine the potatoes, carrots, and green beans.
  6. Add minced garlic, olive oil, thyme, salt, and pepper; toss to coat.
