  • 1 pound chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and let cool.
  2. In a pan, heat olive oil and add diced chicken. Cook until browned and cooked through.
  3. In a large bowl, combine quinoa, chicken, tomatoes, cucumber, red onion, feta, and olives.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour dressing over the salad and toss to combine.
  6. Serve immediately or store in meal prep containers for later.
