Healing Chicken Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup egg noodles
  • salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in carrots, celery, thyme, and rosemary. Cook for 5 minutes.
  4. Add chicken broth and bring to a boil.
  5. Stir in shredded chicken and egg noodles. Cook until noodles are tender.
  6. Season with salt and pepper, and garnish with parsley before serving.
