Hearty Cheddar Garlic Herb Potato Soup Recipe

A rich and comforting potato soup infused with cheddar cheese, garlic, and herbs, topped with crispy turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Stir in diced potatoes, chicken broth, thyme, and parsley. Bring to a boil and then reduce heat, simmer until potatoes are tender.
  3. Use a potato masher to slightly mash the potatoes for a creamy texture.
  4. Stir in heavy cream and shredded cheddar cheese until melted.
  5. Serve hot, topped with crumbled turkey bacon.

Notes

  • This soup can easily be made vegetarian by using vegetable broth and omitting the turkey bacon.
  • For a spicier kick, add a pinch of cayenne pepper.
