Japanese Style Risotto with Crispy Salmon

Ingredients

  • 1 cup Arborio rice
  • 4 cups dashi broth
  • 2 tablespoons soy sauce
  • 1 teaspoon mirin
  • 1 teaspoon sesame oil
  • 2 green onions, chopped
  • 1/2 cup peas
  • 2 salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a pot, heat the dashi broth and keep it warm.
  2. In another pan, add olive oil and sear the salmon fillets until golden brown. Remove and set aside.
  3. In the same pan, add Arborio rice and toast for a few minutes.
  4. Gradually add warm dashi broth, stirring constantly until absorbed.
  5. Add soy sauce, mirin, sesame oil, peas, and green onions. Mix well.
  6. Plate the risotto and top with the crispy salmon.
