  • 1 cup buttermilk
  • 2 tablespoons lemon zest

  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon zest and juice.
  5. In another bowl, combine the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk.
  7. Fold in the blueberries gently.
  8. Pour the batter into a greased and floured cake pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
