Lemon Quinoa & Chickpea Salad

  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped

  • 3 tablespoons olive oil

Instructions

  1. Cook the quinoa according to package instructions; let it cool.
  2. In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, and parsley.
  3. Add the cooled quinoa to the bowl and mix gently.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
