Low Carb Greek Chicken Bowls

A delicious and easy low carb recipe for Greek chicken bowls, perfect for weeknight meals.

  • 2 cups cauliflower rice
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced chicken, oregano, garlic powder, onion powder, salt, and pepper. Cook until chicken is browned and cooked through.
  2. While chicken is cooking, prepare cauliflower rice according to package instructions.
  3. Once chicken is cooked, stir in cherry tomatoes, olives, and feta cheese. Cook for an additional 2-3 minutes until warmed through.
  4. Serve chicken mixture over cauliflower rice and garnish with fresh parsley.
