Mango Sticky Rice

  • 1 cup glutinous rice
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangos
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Rinse the glutinous rice until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the rice and steam it over a pot of boiling water for about 30 minutes until tender.
  3. In a saucepan, heat the coconut milk, sugar, and salt over medium heat until the sugar dissolves.
  4. Toss the cooked rice with 1 cup of the coconut milk mixture and let it sit for 30 minutes.
  5. Slice the mangoes and serve them alongside the sticky rice, drizzling with additional coconut milk if desired and sprinkling with sesame seeds.

Notes

  • For best results, use ripe, sweet mangoes.
  • Adjust the sweetness by adding more or less sugar to the coconut milk.
